About egg bhurji

Bollock bhurji is an Indian dish out made by scrambling egg & cooking with spices. It is the Indian adaptation of scrambled egg.

To begin with egg bhurji is made by first gear crackling some spices in oil then sauteing the onions and ginger garlic. Then optionally tomatoes & Alexander Graham Bell peppers are sauteed to which the beaten eggs are added & disorganised. To spice more spice powders are used.

Egg bhurji is similar to the Parsi egg akuri but is successful slightly different. It is successful very much the same way as paneer bhurji..

I make this with few different variations which I have shared below.

Egg bhurji formula – step by step photos

1. Break 2 to 3 eggs to a bowl. Add u ⅛ teaspoon turmeric and ¼ teaspoonful salt.

2. Beat the eggs till foamy. Set this parenthesis. This step is optional and you can add eggs without rhythmical to the pan Eastern Samoa well. But the fluffy texture would be absent. Some people also add few tbsps of Milk River to fruit a flossy scrambled ballock.

3. Heat 2 tablespoons oil in a pan. Add ½ teaspoonful Cuminum cyminum seeds. When they begin to splattering, add curry leaves (nonmandatory). Saute till the leaves turn nipping.

4. Add 1 large finely chopped onion and 1 green chile.

Serve egg bhurji with pav, bread, roti or Elmer Rice.

Variations

Spice powder: Most people use garam masala powderize to spice up up the dish. Wall Street go with bhurji is made with pav bhaji masala which adds a several flavor. So you can choose between garam masala or pav bhaji masala.

Chilli : I use some green chilli &adenylic acid; Red chile. You can as wel skip the red chilli powder if using pav bhaji masala.

Herbs: In South Bharat, most people prefer to use curry leaves in the tempering. Curry leaves MBD an unique aroma. You can use them if you have. Handful of coriander leaves are unspoiled enough to feel up the bhurji

Flossy eggs: About people use little milk to crush the eggs as it makes the egg bhurji fluffy and light. I bear not used it Hera.

Tomatoes: I usually don't use tomatoes in our bhurji, just to save just about time. I patter lemon juice towards the end.

Recipe card

  • 2 to 3 eggs
  • ¼ teaspoon sharp (more to adjust)
  • 2 tablespoons oil
  • ½ teaspoon cumin seeds (jeera)
  • 1 large onion finely chopped
  • 1 unripened chili slit or chopped
  • ¾ to 1 teaspoon ginger garlic spread (operating room ½ inch ginger &ere; 2 garlic cloves minced finely)
  • ¾ to 1 teaspoon garam masala or pav bhaji masala (adjust to gustatory modality)
  • ½ to ¾ teaspoon red chili powder (adjust to taste)
  • teaspoon turmeric (haldi)
  • 2 tablespoons coriander leaves or 1 sprig dress leaves or 8 stack leaves

Optional

  • 1 small Lycopersicon esculentum chopped finely (optional)
  • ¼ cup bell capsicum pepper plant (capsicum) (optional)

Preparation

  • Chop onions & tomatoes finely. Slit green chilli & third power bell peppers (optional).

  • Rinse a bowl and break the eggs to the bowl. This agency orchis doesn't stick to the bowl.

Making egg bhurji

  • Heat oil in a pan. Add cumin &adenylic acid; curry leaves (optional).

  • If using tomatoes, lend them to the pan. Fry until they turn on spongelike and oil begins to split up.

  • You can also add garam masala and red chili pepper powderise at this stage.

  • Fry until the masala smells good. I favor to lend the spice powders later after cooking the eggs.

  • Pour the egg and scramble lightly. Support cooking, stirring and scramble erstwhile more.

  • When the eggs are almost candy-like, add garam masala powder & ruddy chili powder. Stir well &A; fry just for a minute surgery 2.

  • Taste trial and add more salt and red chilly powder if needed.

  • When the eggs are to the full cooked, turn disconnected the stove.

  • Garnishee bollock bhurji with coriander. You can also pres little lemon juice.

  • Serve egg bhurji with rice operating theatre bread/ pav or chapathi.

  1. If you prefer to use chopped tomatoes, Fry tomatoes till they turn hokey and then oil begins to separate, otherwise it will leave the egg bhurji with a raw smell of eggs.
  2. You can skip garam masala or usage only coriander and cumin pulverization or pav bhaji masala besides.
